Description: This ENAFS module is the first of six developed to help improve the nutritional status and health of older Floridians. The module includes five interactive lessons designed to help older adults make lifestyle choices that promote better health. The authors use the Stages of Change Model for behavior change. The focus of Lesson 1 is the “MyPyramid for Older Adults” mini poster, developed by nutrition faculty at the University of Florida. Lessons 2 through 5 focus on nutrients that have special recommendations for older adults. This module is an update and expansion of the original ENAFS Unique Nutritional Needs of Elders module that was developed in 2001 and replaces that module in the ENAFS Healthy Living Program.

Description: This learning module addresses issues related to aging and nutrition. The three lessons are:
  • Lesson 1: Importance of Eating and Strategies for Eating Alone
  • Lesson 2: Meals Without Cooking
  • Lesson 3: Nutritious Snacking
The goal of lesson one is to increase awareness among older adults of the importance of eating regularly and to provide strategies to improve caloric and nutrient intake. Participants are encouraged to identify and overcome nutritional risk factors. One tool used in the lesson is the Determine Your Nutritional Health screening form. In addition to these risk factors, the authors also address changes in taste and smell, constipation, and activity level. The activity in Lesson 1 uses a question and answer format following the stages of the screening form checklist. The goal of Lesson 2 is to provide information on healthy and balanced meals without cooking. The goal of Lesson 3 is to help elders select healthy snacks. Examples of healthy snacks from each food group are provided. Each lesson includes goals, concepts, learning and behavioral objectives, activities, background information and an evaluation. Many of the activities, hand-outs and transparencies are included in the CD-ROM.

Description: Recent and classical literature was reviewed to obtain current information on the nutrient value of fresh, canned and frozen foods with an emphasis on fruits and vegetables. The extensive literature review confirms that all forms of fruits and vegetables provide nutrients needed for a healthful diet, and that exclusively consuming fresh fruits and vegetables ignores nutritional benefits provided by canned products. The study was conducted by the University of California Davis, published in the Journal of the Science of Food and Agriculture and funded by the Canned Food Alliance. Description: This is a series of five culturally sensitive and relevant educational pamphlets that can help immigrant Asian parents understand how they can adapt to a new environment and food supply in a way that will foster the health and welfare of their children. They were developed in light of studies which have shown that the diets of low income SNAP Certified Eligible and SNAP Likely Eligible immigrants to the United States become less nutrient dense as immigrant families acculturate. Risk for obesity increases as each generation becomes more and more “Americanized” in terms of their eating patterns. The fifth lesson is planned and presented by the Student Nutrition Aides. The USDA Eat Smart. Play Hard.™ materials are used to enhance the curriculum lessons. The CES Nutrition Educators follow up with the evaluations and reporting the comments from the teachers and students.

Description: Healthy Baby, Healthy Me is a free, downloadable food safety curriculum in English or Spanish that can be taught by nutrition educators as a stand-alone four-part food safety lesson series or used to integrate key food safety concepts into established nutrition education programs targeting pregnant women. Included are four lesson plans, slides that can be projected or used as flip charts, a teacher's guide, participant handouts, class activities, evaluation and advertising materials. This collaborative effort between Extension researchers from The Ohio State University and Colorado State University was supported with funds by a USDA-National Integrated Food Safety Initiative.

The last six lessons focus on disease prevention and reinforce nutrition and healthy lifestyle choices to decrease the risk of disease. The compact disk and zip disk included with the curriculum allow educators access to lesson plans, PowerPoint slides, references, graphics, visuals, and handouts. Optional handouts for older adults are available in 8 of the 10 lessons. Healthy recipes and recipe alterations are offered as well.

  • The messages and supporting content are based on findings from 30 focus-groups conducted with low-income mothers and children, over half of whom were participating in FNS programs.

Description: The Iowa Nutrition Network's social marketing campaign, Pick a better snack ™ & ACT (PABS), was created to promote the consumption of fruits and vegetables by marketing them as an attractive alternative to less healthy snacks. PABS classroom lessons are available online (four per month) for elementary grades K-5. Each month, lessons feature seasonal fruits (focus on fruits), vegetables (vary your veggies), physical activity, and connections to a national resource (Eat Smart Play Hard, My Pyramid, Team Nutrition, Fruits & Veggies — More Matters™). Lessons incorporate nutrition and physical activity bingo cards (scorecards for upper elementary students) to encourage experiential learning and engage families. Monthly parent newsletters (available in English and Spanish) are sent home with students to encourage families to eat more fruits and vegetables and to be active together. Supplemental resources are available including fruit and vegetable fact sheets and photographs. Pick a better snack ™ & ACT social marketing components enhance and reinforce the classroom lessons. These include newspaper articles, radio PSAs, bookmarks, billboards, certificates, stickers, recipes, posters and editable print materials.

The events feature a bite sized portion of a new recipe or food, store intercom announcements, handouts for adults and children, table top displays, and small posters. Description: The training program has a twofold objective for nutrition educators working with the elderly, 1) to recognize that older adults are a unique population and therefore learn differently 2) to incorporate this knowledge to provide appropriate nutrition education. The videocassette component is divided into 7 sections with a 'stop and learn' opportunity with activities corresponding to each unit. Content covers the following topics 1) the unique opportunity for nutrition education for older adults and the physical changes/stages of the aging process 2) nutritional needs, chronological vs. functional age, and nutrition-related diseases of the elderly 3) specific challenges that face older adults 4) physical changes of aging, safety concerns and referrals 5) utilizing the group setting of nutrition educators for problem solving 6) recognizing that there are frustrations and gifts of working with older populations 7) review of key concepts and conclusion. Materials also include instructions for the compilation of a 'Simulated Aging Kit'. This kit and the associated activities are designed to simulate the aging process and provide educators reflection and experiential learning. The kit includes simulation of aging in areas including: sight and visual (plastic wrap blindfold); mobility, flexibility, and dexterity (bandaging fingers together); hearing (cotton balls in the ears); maneuvering with a device such as a cane or walker; and the challenges associated with gradual sensory decreases in the sense of smell, taste and flavor recognition. Participants perform several routine tasks associated with the preparation, service and consumption of food under these simulated circumstances and rank the difficulty.

Increasing fruit and vegetable consumption, optimally to at least “5 cups” per day, is the primary message. The magazine is illustrated and in full color. Based on the Stages of Change Theory, magazine contents lead readers through assessment of their current “stage”, understanding of readiness to make changes, and then provide suitable messages to direct them toward change. An explanation of the Stages of Change theory is provided in the beginning and the magazine is broken into color-coded sections based on each “stage.” Individual sections include information, practical implementation tips, self-assessment, and “Keys to Success”. Basic information about fruit and vegetables, the health benefits of eating them and what constitutes a 1 cup serving are included throughout. Additional sections on how to choose produce, buying in season, cooking vegetables, trying new vegetables, and tips for eating out are included in the corresponding appropriate “stage.” The original version of the magazine has been revised to now be consistent with the 2005 Dietary Guidelines for American. Recipes are included at the end, categorized by speed of preparation. Web-links to more fruit and vegetable resources are included and a review of three cookbooks is provided. Promotion of MyPyramid and MyPyramid Tracker included at the conclusion.
